
Ingredients:
4 large bell peppers (any color)
1/2 pound shrimp, peeled, deveined, and chopped
1/2 pound lump crab meat
1 cup cooked rice
1/2 cup mayonnaise
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped (plus more for garnish)
1 tablespoon lemon juice
1 teaspoon Old Bay seasoning
Salt and pepper to taste
1/4 cup panko breadcrumbs (optional, for topping)
1 tablespoon butter, melted (optional, for topping)
Directions:
I. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
II. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers cut side up in the prepared baking dish.
III. In a large bowl, combine the chopped shrimp, crab meat, cooked rice, mayonnaise, mozzarella cheese, Parmesan cheese, minced garlic, chopped parsley, lemon juice, Old Bay seasoning, salt, and pepper. Mix until well combined.
IV. Spoon the seafood mixture evenly into each bell pepper, packing it tightly.
V. If using, mix the panko breadcrumbs with melted butter and sprinkle over the tops of the stuffed peppers.
VI. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is heated through and golden on top.
VII. Garnish with additional chopped parsley before serving.
