Strawberry Earthquake Cake

Ingredients:
1 box white cake mix (plus ingredients listed on the box)
1 cup fresh strawberries, chopped
1/2 cup unsalted butter, melted
8 oz cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract
1/2 cup shredded coconut (optional)
1/2 cup chopped pecans (optional)
Fresh strawberries and whipped cream (for garnish)

Directions:
I. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
II. Prepare the white cake mix according to the package instructions. Pour the batter into the prepared baking dish and spread it evenly.
III. In a medium bowl, beat together the softened cream cheese, melted butter, powdered sugar, and vanilla extract until smooth and creamy.
IV. Drop spoonfuls of the cream cheese mixture over the cake batter. Use a knife to swirl the cream cheese mixture into the cake batter, creating a marbled effect.
V. Sprinkle the chopped strawberries evenly over the top. If using, add shredded coconut and chopped pecans for extra texture and flavor.
VI. Bake in the preheated oven for 40-45 minutes, or until the cake is set and slightly golden on top. The cake may look a bit cracked or “earthquake” like on the surface, which is normal.
VII. Let the cake cool before slicing. Garnish with fresh strawberries and a dollop of whipped cream before serving.
