Blueberry Fritter Bites: Baked Morning Delights

Ingredients:
For the Fritter Bites:
1 1/2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
1 large egg
1 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
1 cup fresh blueberries
For the Glaze:
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract

Directions:
I. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with paper liners.
II. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
III. In a separate bowl, combine the milk, egg, vanilla extract, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined.
IV. Gently fold in the fresh blueberries, being careful not to crush them.
V. Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
VI. Bake for 12-15 minutes, or until the fritter bites are golden brown and a toothpick inserted into the center comes out clean. Allow them to cool slightly in the tin before transferring to a wire rack to cool completely.
VII. While the fritter bites are cooling, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
VIII. Dip each fritter bite into the glaze, letting the excess drip off. Place them back on the wire rack to set.
