
Ingredients:
4 bone-in pork chops
Salt and pepper to taste
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon dried thyme
1 teaspoon dried parsley
1 1/2 lbs potatoes, peeled and thinly sliced
1 cup shredded mozzarella cheese
Fresh parsley, chopped (for garnish)
Directions:
I. Preheat the oven to 375°F (190°C). Season the pork chops with salt and pepper on both sides.
II. In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the pork chops for 3-4 minutes on each side until browned. Remove from the skillet and set aside.
III. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese, thyme, and parsley until the sauce thickens, about 2-3 minutes.
IV. Layer the sliced potatoes in the skillet, making sure they are evenly distributed. Pour half of the cream sauce over the potatoes, then sprinkle with half of the shredded mozzarella cheese.
V. Place the seared pork chops on top of the potatoes. Pour the remaining cream sauce over the chops and sprinkle with the remaining mozzarella cheese.
VI. Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until the pork chops are cooked through and the potatoes are tender and golden brown.
VII. Garnish with chopped fresh parsley and serve hot.
