Slow-Cooker Brisket

Ingredients:
4 lbs beef brisket
Salt and pepper to taste
1 tablespoon olive oil
1 large onion, sliced
4 cloves garlic, minced
1 cup beef broth
1/2 cup barbecue sauce
1/4 cup soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
1 teaspoon smoked paprika
1 teaspoon dried thyme
Fresh parsley, chopped (for garnish)

Directions:
I. Season the brisket with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sear the brisket on all sides until browned, about 4-5 minutes per side. Transfer to the slow cooker.
II. In the same skillet, add the sliced onion and garlic. Sauté for 2-3 minutes until softened, then add to the slow cooker over the brisket.
III. In a bowl, mix together the beef broth, barbecue sauce, soy sauce, Worcestershire sauce, brown sugar, smoked paprika, and thyme. Pour the mixture over the brisket in the slow cooker.
IV. Cover and cook on low for 8-10 hours, or until the brisket is tender and easily shredded.
V. Once cooked, remove the brisket from the slow cooker and let it rest for 10 minutes before slicing. Garnish with chopped fresh parsley and serve with the sauce from the slow cooker.
