
Ingredients:
2 ribeye steaks (about 1 inch thick)
Salt and black pepper, to taste
2 tablespoons olive oil
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
2 cups cherry tomatoes, halved
1/2 red onion, thinly sliced
2 tablespoons balsamic vinegar
1 tablespoon extra virgin olive oil
Fresh parsley, chopped (for garnish)
4 cups French fries, cooked according to package instructions
Directions:
I. Preheat your grill to medium-high heat.
II. Season the ribeye steaks generously with salt, black pepper, and olive oil on both sides. Sprinkle the fresh thyme and rosemary evenly over the steaks.
III. Place the steaks on the preheated grill. Cook for 4-5 minutes per side for medium-rare, or until they reach your desired doneness. Remove the steaks from the grill and let them rest for 5 minutes before serving.
IV. While the steaks are resting, prepare the salad by combining the cherry tomatoes and red onion in a bowl. Drizzle with balsamic vinegar and extra virgin olive oil, and toss to coat. Season with salt and pepper to taste.
V. Serve the grilled steaks alongside the tomato and onion salad, and a generous portion of crispy French fries. Garnish with fresh parsley.
