Salted Caramel Apple Butter

Ingredients:
6 medium apples, peeled, cored, and chopped
1 cup brown sugar
1 cup granulated sugar
1/2 cup apple cider
1/4 cup unsalted butter
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon sea salt
1/2 teaspoon vanilla extract

Directions:
I. In a large pot, combine the chopped apples, brown sugar, granulated sugar, and apple cider. Bring to a simmer over medium heat, stirring occasionally.
II. Reduce the heat to low and cook for 45 minutes, or until the apples are very soft and the mixture has thickened. Stir occasionally to prevent sticking.
III. Use an immersion blender to puree the apple mixture until smooth. Alternatively, transfer the mixture to a blender in batches and blend until smooth.
IV. Return the smooth apple butter to the pot. Stir in the unsalted butter, cinnamon, nutmeg, and sea salt. Cook over low heat for an additional 10 minutes, stirring frequently.
V. Remove from heat and stir in the vanilla extract. Allow the apple butter to cool slightly before transferring to sterilized jars.
VI. Store in the refrigerator for up to 3 weeks or process in a water bath canner for long-term storage.
