
Ingredients:
1 lb chicken tenders
1/2 cup brown sugar
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
6 strips bacon, chopped
1 tablespoon olive oil
1/4 cup all-purpose flour
1 large egg, beaten
1 cup panko breadcrumbs
Directions:
I. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
II. In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, salt, and black pepper.
III. Place the chopped bacon in a large skillet over medium heat and cook until crispy. Remove the bacon and drain on paper towels, leaving the bacon fat in the skillet.
IV. In the same skillet with the bacon fat, heat the olive oil over medium heat. Add the chicken tenders and cook until golden brown on both sides, about 2-3 minutes per side. Transfer the chicken to a paper towel-lined plate to drain excess oil.
V. Set up a breading station: place the flour in one bowl, the beaten egg in another, and the panko breadcrumbs mixed with the brown sugar seasoning in a third bowl.
VI. Dredge each chicken tender in flour, then dip into the beaten egg, and coat with the panko mixture.
VII. Arrange the breaded chicken tenders on the prepared baking sheet. Bake for 15-20 minutes, or until the chicken is cooked through and the coating is crispy.
VIII. Sprinkle the crispy bacon over the chicken tenders before serving.
