South African Bobotie

Ingredients:
1 lb ground beef or lamb
1 onion, chopped
1 clove garlic, minced
1 tbsp curry powder
1 tsp turmeric
1 tsp ground cumin
1 tbsp vinegar or lemon juice
1 tbsp chutney or apricot jam
2 tbsp raisins or dried apricots, chopped
1 slice white bread, soaked in milk and crumbled
2 eggs
1/2 cup milk
Salt and pepper to taste
Fresh thyme or bay leaves for garnish

Instructions:
1️⃣ Preheat your oven to 350°F (180°C).
2️⃣ In a large pan, sauté the onion and garlic until soft. Add the ground beef or lamb and brown the meat.
3️⃣ Stir in the curry powder, turmeric, and cumin. Add the vinegar, chutney, raisins, and soaked bread. Cook for a few minutes until everything is well combined.
4️⃣ Transfer the meat mixture to a greased baking dish.
5️⃣ In a small bowl, whisk together the eggs, milk, and a pinch of salt. Pour the egg mixture over the meat.
6️⃣ Garnish with fresh thyme or bay leaves on top and bake for 30-40 minutes, or until the custard is set and golden brown.
7️⃣ Serve with yellow rice, chutney, or a side of veggies.
