Long John Silver’s Batter Recipe

Ingredients:
1 cup all-purpose flour
1/4 cup cornstarch
2 teaspoons baking powder
1 teaspoon salt
1 cup cold water
1/2 teaspoon paprika (optional, for flavor)
Vegetable oil, for frying
1 lb white fish fillets (such as cod or haddock)

Directions:
Prepare the Batter: In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, and paprika (if using). Gradually add the cold water, whisking until the batter is smooth and lump-free. The batter should be thick enough to coat the back of a spoon. If it’s too thick, add a little more water; if it’s too thin, add a bit more flour.
Heat the Oil: Pour vegetable oil into a deep frying pan or pot, enough to cover the fish fillets. Heat the oil to 350°F (175°C).
Batter the Fish: Pat the fish fillets dry with paper towels. Dip each fillet into the batter, ensuring it is fully coated. Let any excess batter drip off.
Fry the Fish: Carefully place the battered fish into the hot oil. Fry in batches, making sure not to overcrowd the pan. Fry for 3-4 minutes on each side, or until the fish is golden brown and crispy. The fish should be cooked through and flaky.
Drain and Serve: Remove the fried fish from the oil and drain on paper towels to remove any excess oil. Serve hot with tartar sauce, lemon wedges, and your favorite sides.
