Crockpot Cheesy Chicken Sausage Casserole

Ingredients:
1 lb chicken sausage, sliced
2 cups cooked chicken, shredded
2 cups pasta (penne or rotini)
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1/2 cup sour cream
2 cups shredded cheddar cheese
1 cup mozzarella cheese, shredded
1/2 cup onion, diced
1/2 cup red bell pepper, diced
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish (optional)

Directions:
Cook the pasta according to the package instructions until al dente. Drain and set aside.
In a large bowl, combine the cream of chicken soup, chicken broth, sour cream, garlic powder, Italian seasoning, salt, and pepper. Mix until smooth.
In your crockpot, layer the sliced chicken sausage, shredded chicken, cooked pasta, diced onion, and red bell pepper.
Pour the soup mixture over the ingredients in the crockpot and stir to combine.
Sprinkle the cheddar cheese evenly over the top.
Cover and cook on low for 3-4 hours, or on high for 1.5-2 hours, until everything is heated through and the cheese is melted and bubbly.
Add the mozzarella cheese during the last 15 minutes of cooking and allow it to melt.
Garnish with fresh parsley if desired and serve hot!
