2 ripe bananas, mashed
2 cups rolled oats
1/2 cup chopped walnuts (or pecans)
1 cup milk (dairy or plant-based)
2 large eggs
1/4 cup honey or maple syrup
1 tsp vanilla extract
1 tsp cinnamon
1 tsp baking powder
Pinch of salt
Directions:
Preheat your oven to 350°F (175°C) and grease a muffin tin.
In a large bowl, mash the ripe bananas. Add the eggs, milk, honey, and vanilla extract, mixing well.
Stir in the oats, chopped nuts, cinnamon, baking powder, and a pinch of salt until fully combined.
Spoon the mixture into the greased muffin tin, filling each cup about 3/4 full.
Bake for 20-25 minutes, or until the oatmeal cups are golden brown and set. Let them cool for a few minutes before removing from the tin.
