Celery and Apple Salad

Ingredients:
4 celery stalks, thinly sliced
2 apples (Granny Smith or Honeycrisp), thinly sliced
1/4 cup walnuts, chopped
1/4 cup dried cranberries
2 tbsp fresh parsley, chopped
2 tbsp lemon juice
2 tbsp olive oil
1 tsp Dijon mustard
Salt & pepper to taste
Shaved Parmesan (optional for garnish)

Directions:
In a large bowl, toss together the sliced celery, apples, walnuts, dried cranberries, and parsley.
In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the dressing.
Drizzle the dressing over the salad and toss until everything is evenly coated.
Garnish with shaved Parmesan if desired, and serve immediately.
