Mexican Casserole

Ingredients:
1 lb ground beef
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies
2 cups shredded cheddar cheese
1 cup cooked rice
1 cup salsa
1 avocado, diced (for garnish)
Fresh cilantro, chopped (for garnish)
Sour cream (optional for serving)

Directions:
Preheat your oven to 375°F (190°C).
Cook the ground beef in a skillet over medium heat until browned. Drain any excess fat and stir in taco seasoning according to package instructions.
Add black beans, corn, diced tomatoes with green chilies, and salsa to the skillet with the beef. Stir and let it simmer for 5 minutes.
Stir in the cooked rice, making sure everything is evenly combined.
Transfer the mixture to a greased baking dish. Top with shredded cheddar cheese.
Bake for 20-25 minutes, until the cheese is melted and bubbly.
Garnish with diced avocado, fresh cilantro, and serve with sour cream on the side if desired.
