Spinach Garlic Meatballs Stuffed with Mozzarella

Ingredients:
1 lb ground beef
1 cup fresh spinach, finely chopped
4 cloves garlic, minced
1 cup bread crumbs
1 large egg
½ cup grated Parmesan cheese
1 teaspoon salt
½ teaspoon black pepper
8 oz mozzarella cheese, cut into small cubes
2 tablespoons olive oil
Fresh parsley, chopped (for garnish)

Directions:
In a large bowl, combine ground beef, chopped spinach, minced garlic, bread crumbs, egg, grated Parmesan, salt, and black pepper. Mix thoroughly until the ingredients are well incorporated.
Take a small portion of the meat mixture and flatten it in your hand. Place a cube of mozzarella in the center and mold the meat around it, forming a ball. Ensure that the cheese is completely enclosed within the meat.
Heat olive oil in a skillet over medium heat. Once hot, add the meatballs and cook, turning occasionally, until they are evenly browned and cooked through, about 10-15 minutes.
Drain the meatballs on paper towels to remove excess oil, if desired.
Serve the meatballs garnished with fresh parsley. These are splendid when accompanied by a side of marinara sauce for dipping or served over a bed of cooked pasta.
