
Ingredients:
For the Meatloaf:
1 lb ground beef
1 small onion, finely chopped
1 cup breadcrumbs
1 large egg
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
½ cup ketchup (optional for topping)
For the Mashed Potatoes:
2 cups mashed potatoes (from 3 medium potatoes)
½ cup milk
2 tablespoons butter
Salt and pepper to taste
Directions:
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, combine the ground beef, chopped onion, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are evenly incorporated.
Spoon the meat mixture into the prepared muffin tin, filling each cup to the top and pressing down slightly.
Optional: Spread a small amount of ketchup on top of each mini meatloaf for extra flavor.
Bake in the preheated oven for 20-25 minutes, until the meatloaf cupcakes are cooked through and the internal temperature reaches 160°F (71°C).
While the meatloaf is baking, prepare the mashed potatoes by mashing the cooked potatoes with milk, butter, salt, and pepper until smooth and creamy.
Once baked, remove the meatloaf cupcakes from the oven and allow them to cool slightly.
Pipe or spoon the mashed potatoes on top of each meatloaf cupcake, creating a “frosting” effect.
