Baked Beef Chiles Rellenos Casserole

Ingredients:
1 lb ground beef
1 medium onion, diced
1 garlic clove, minced
2 cans (7 oz each) whole green chiles, drained and halved
2 cups shredded Mexican blend cheese
4 large eggs
1 cup milk
1/4 cup all-purpose flour
1 tsp cumin
1 tsp chili powder
Salt and pepper to taste
Optional toppings: jalapeños, cilantro, diced tomatoes

Directions:
Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
In a large skillet, cook ground beef with diced onion and minced garlic over medium heat until the meat is browned and onions are tender. Drain any excess grease. Season with cumin, chili powder, salt, and pepper.
Layer half of the green chiles on the bottom of the prepared baking dish. Spread the beef mixture evenly on top of the chiles. Layer the remaining green chiles over the beef and sprinkle 1 1/2 cups of shredded cheese over the top.
In a medium bowl, whisk together eggs, milk, and flour until smooth. Pour the egg mixture over the casserole.
Bake uncovered for 30-35 minutes, or until the eggs are set and the casserole is bubbly and golden.
Top with the remaining cheese and bake for another 5 minutes, until melted and slightly browned.
Remove from oven and garnish with jalapeños, cilantro, and diced tomatoes if desired.
Serve hot and enjoy!
