
Ingredients:
1 lb ground beef
1 packet taco seasoning
4 medium potatoes, thinly sliced
1 can diced tomatoes with green chilies (10 oz)
1 cup corn (fresh or canned)
1 cup black beans (optional)
2 cups shredded cheddar or Mexican blend cheese
1/2 cup diced onions
1/2 cup diced bell peppers
Salt and pepper, to taste
Fresh cilantro, chopped (for garnish)
Instructions:
Preheat Oven: Preheat your oven to 375°F (190°C).
Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess grease. Add the taco seasoning and a splash of water. Stir until well combined.
Add Vegetables: Stir in the diced onions, bell peppers, diced tomatoes, corn, and black beans (if using). Let everything cook together for about 5 minutes to combine the flavors.
Layer the Casserole: In a greased 9×13-inch baking dish, layer half of the sliced potatoes. Sprinkle with salt and pepper. Add half of the ground beef mixture on top of the potatoes, then sprinkle with 1 cup of shredded cheese. Repeat the layers, finishing with a final layer of cheese on top.
Bake: Cover the casserole with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and the potatoes are tender.
Serve: Garnish with fresh cilantro before serving.
