Creamy Butternut Squash Pasta with Sausage and Spinach

Ingredients:
12 oz rotini or your preferred pasta
1 lb Italian sausage (mild or spicy)
3 cups butternut squash, cubed
2 cups fresh spinach, chopped
1/2 cup grated Parmesan cheese
1/2 cup heavy cream
1/2 cup chicken broth
1 small onion, diced
2 cloves garlic, minced
2 tbsp olive oil
Salt and pepper to taste
Optional: red pepper flakes for extra heat

Instructions:
Cook the Pasta: Boil pasta in a large pot of salted water until al dente according to package instructions. Drain and set aside.
Cook the Sausage: Heat a large skillet over medium heat. Add the Italian sausage, breaking it into small pieces with a spatula. Cook until browned and cooked through, then transfer to a plate.
Sauté the Butternut Squash: In the same skillet, add the olive oil. Add the diced onion and garlic, sautéing for 2-3 minutes until fragrant. Add the cubed butternut squash, season with salt and pepper, and cook for 8-10 minutes, stirring occasionally, until the squash is tender.
Add Cream and Broth: Pour in the chicken broth and heavy cream, stirring to combine. Simmer for 3-5 minutes, allowing the sauce to thicken slightly.
Combine Everything: Stir in the cooked sausage, chopped spinach, and drained pasta. Toss everything together, ensuring the pasta is well coated with the creamy sauce. Sprinkle the Parmesan cheese and mix until everything is evenly distributed.
Garnish and Serve: Serve hot, garnished with extra Parmesan cheese and red pepper flakes if desired.
