Creamy Butternut Squash Orzo with Sausage

Ingredients:
1 lb Italian sausage, sliced
1 cup orzo pasta
2 cups butternut squash, cubed
1/2 cup spinach, roughly chopped
1/2 cup Parmesan cheese, grated
2 cups chicken broth
1/2 cup heavy cream
1 tbsp olive oil
1/2 tsp garlic powder
Salt and pepper to taste

Directions:
Cook the sausage: In a large pan, heat olive oil and cook sausage until browned. Remove from the pan and set aside.
Cook the butternut squash: In the same pan, add the cubed squash and cook for 8-10 minutes until soft.
Add the orzo and broth: Stir in the orzo and chicken broth, bringing to a simmer. Cook for about 10 minutes, stirring occasionally until the orzo is tender.
Make it creamy: Stir in the heavy cream, garlic powder, and cooked sausage. Simmer for 2 more minutes until everything is well combined.
Finish with spinach and cheese: Stir in the chopped spinach and Parmesan. Season with salt and pepper, and serve hot!
