Broccoli Cashew Salad with Apples, Pears, and Cranberries

Ingredients:
4 cups fresh broccoli florets
1 large apple, chopped
1 pear, chopped
1/2 cup dried cranberries
1/3 cup roasted cashews
1/4 cup red onion, finely chopped (optional)
For the Dressing:
1/2 cup Greek yogurt (or mayonnaise)
2 tbsp honey
1 tbsp apple cider vinegar
Salt and pepper to taste

Directions:
Prepare the veggies: In a large bowl, combine the broccoli florets, chopped apple, pear, dried cranberries, and red onion (if using).
Make the dressing: In a small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, salt, and pepper until smooth.
Toss the salad: Pour the dressing over the broccoli mixture and toss to coat everything evenly.
Add the cashews: Just before serving, sprinkle the roasted cashews on top for extra crunch.
