Grilled Marinated Chicken Skewers

Ingredients:
1 lb boneless, skinless chicken breast, cut into 1-inch cubes
1/4 cup olive oil
2 tbsp lemon juice
2 cloves garlic, minced
1 tsp dried oregano
1/2 tsp paprika
Salt and pepper to taste
Fresh parsley for garnish
Wooden or metal skewers

Directions:
Prepare the marinade: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
Marinate the chicken: Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
Preheat the grill: Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 15-20 minutes to prevent burning.
Assemble the skewers: Thread the marinated chicken cubes onto skewers.
Grill the chicken: Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
Garnish and serve: Remove from the grill, garnish with fresh parsley, and serve hot.
