2 lbs potatoes, peeled and cubed
1/4 cup olive oil
2 cloves garlic, minced
1/2 cup feta cheese, crumbled
1/4 cup Greek yogurt
2 tbsp lemon juice
1/2 cup milk (optional, for creaminess)
Salt and pepper to taste
Fresh parsley for garnish
Directions:
Cook the potatoes: In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 15-20 minutes. Drain and return to the pot.
Sauté the garlic: In a small pan, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
Mash the potatoes: Mash the cooked potatoes with a potato masher. Stir in the garlic-infused olive oil, Greek yogurt, lemon juice, and crumbled feta cheese. Add milk if needed for extra creaminess.
Season: Season with salt and pepper to taste.
Garnish and serve: Top the mashed potatoes with additional feta cheese, a drizzle of olive oil, and fresh parsley.
