2 large roasted red bell peppers (jarred or fresh)
1 cup crumbled feta cheese
2 cloves garlic, minced
2 tbsp olive oil (plus more for drizzling)
1 tbsp lemon juice
1/2 tsp smoked paprika
Salt and pepper to taste
Fresh parsley for garnish
Directions:
Prepare the ingredients: If using fresh peppers, roast them over a flame or in the oven until charred, then peel and seed them. If using jarred roasted red peppers, drain them well.
Blend the dip: In a food processor, combine roasted red peppers, feta cheese, garlic, olive oil, lemon juice, smoked paprika, salt, and pepper. Blend until smooth and creamy.
Adjust seasoning: Taste and adjust seasoning with more lemon juice, salt, or pepper if needed.
Garnish and serve: Transfer the dip to a serving bowl. Drizzle with olive oil and garnish with fresh parsley and additional crumbled feta.
Enjoy: Serve with pita bread, crackers, or fresh vegetables for dipping.
