Steak Frites with Herb Butter Sauce

Ingredients:
For the Steak:
2 ribeye or sirloin steaks (about 1 lb each)
1 tbsp olive oil
Salt and pepper to taste
For the Herb Butter Sauce:
4 tbsp unsalted butter, softened
1 tbsp fresh parsley, chopped
1 tbsp fresh chives, chopped
2 cloves garlic, minced
1 tsp Dijon mustard
1/2 cup heavy cream
Salt and pepper to taste
For the Frites (French Fries):
3 large potatoes, cut into thin strips
2 tbsp olive oil
Salt to taste
Fresh parsley for garnish

Directions:
Prepare the fries: Preheat your oven to 425°F (220°C). Toss the potato strips in olive oil and spread them on a baking sheet in a single layer. Bake for 25-30 minutes, turning halfway through, until golden and crispy. Season with salt and garnish with fresh parsley.
Cook the steaks: While the fries are baking, season the steaks with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the steaks for 4-5 minutes per side for medium-rare (or cook to your desired doneness). Remove the steaks and let them rest for 5 minutes.
Make the herb butter sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute. Stir in the fresh herbs and Dijon mustard, then pour in the heavy cream. Simmer for 2-3 minutes until the sauce thickens slightly. Season with salt and pepper.
Serve: Slice the steaks and serve them with the crispy frites. Drizzle the herb butter sauce generously over the steak and enjoy!
