Cheesy Garlic Bread Shrimp Grilled Cheese

Ingredients:
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon paprika
Salt and pepper to taste
8 slices of thick bread
2 tablespoons unsalted butter, softened
2 cups shredded mozzarella or cheddar cheese
Fresh parsley, chopped (for garnish)

Directions:
Cook the shrimp: Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the shrimp, paprika, salt, and pepper. Cook the shrimp for 2-3 minutes per side until pink and fully cooked. Remove from the skillet and set aside.
Prepare the bread: Butter one side of each slice of bread. On the unbuttered side, sprinkle a generous amount of shredded cheese.
Assemble the sandwich: Place 4 slices of bread (cheese side up) in a skillet or on a griddle over medium heat. Top each with cooked shrimp and another slice of bread (butter side up).
Grill the sandwiches: Grill each sandwich for 3-4 minutes per side, pressing down gently, until the bread is golden brown and the cheese is melted.
Serve: Garnish with freshly chopped parsley and serve hot, optionally with a side of garlic butter for dipping.
