Crockpot Beef Tips and Noodles

Ingredients:
2 lbs beef stew meat or beef tips
1 onion, chopped
3 garlic cloves, minced
2 cups beef broth
1/4 cup soy sauce
2 tbsp Worcestershire sauce
1/4 cup flour (for thickening)
1 tsp black pepper
1 tsp dried thyme
1 cup baby potatoes (optional)
12 oz egg noodles
Fresh parsley for garnish

Directions:
Brown the beef: In a skillet, lightly brown the beef tips over medium-high heat. This adds flavor but is optional.
Add to crockpot: Place the beef, onions, garlic, beef broth, soy sauce, Worcestershire sauce, black pepper, and thyme in the crockpot. Stir to combine. Add baby potatoes if using.
Cook: Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender.
Thicken the gravy: About 30 minutes before serving, mix the flour with a little water to make a slurry, then stir it into the crockpot to thicken the sauce.
Cook the noodles: In a separate pot, cook the egg noodles according to package instructions. Drain and set aside.
Serve: Serve the beef tips and gravy over the noodles. Garnish with fresh parsley and enjoy!
