Garlic Butter Chicken with Sweet Potatoes

Ingredients:
4 boneless, skinless chicken breasts
2 medium sweet potatoes, sliced
4 tbsp butter
3 garlic cloves, minced
2 tbsp olive oil
1/2 tsp paprika
1/2 tsp dried thyme
Salt and pepper to taste
Fresh basil or parsley for garnish

Directions:
Preheat oven: Preheat your oven to 400°F (200°C).
Season the chicken: Season the chicken breasts with salt, pepper, paprika, and thyme on both sides.
Cook the sweet potatoes: Heat 1 tbsp of olive oil in a large oven-safe skillet over medium heat. Add the sliced sweet potatoes and cook for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
Cook the chicken: In the same skillet, add another tbsp of olive oil. Cook the chicken for 4-5 minutes on each side until browned but not cooked through.
Make the garlic butter: Melt the butter in the skillet, add minced garlic, and stir for 1 minute until fragrant. Return the sweet potatoes to the skillet around the chicken.
Bake: Transfer the skillet to the oven and bake for 15-20 minutes, until the chicken is fully cooked and the sweet potatoes are tender.
Serve: Garnish with fresh basil or parsley and serve warm.
