Garlic Parmesan Baked Zucchini

Ingredients:
2 medium zucchinis, sliced into rounds
2 tbsp olive oil
3 garlic cloves, minced
1/2 cup grated Parmesan cheese
1/4 cup panko breadcrumbs
1 tsp Italian seasoning
Salt and pepper to taste
Fresh basil or parsley for garnish

Directions:
Preheat oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Season zucchini: In a large bowl, toss the zucchini slices with olive oil, minced garlic, Italian seasoning, salt, and pepper.
Prepare topping: In a separate small bowl, mix the Parmesan cheese and panko breadcrumbs together.
Assemble: Place the seasoned zucchini slices in a single layer on the prepared baking sheet. Sprinkle the Parmesan and breadcrumb mixture evenly over the top.
Bake: Bake for 15-20 minutes, or until the zucchini is tender and the topping is golden and crispy.
Serve: Garnish with fresh basil or parsley and serve warm.
