Creamy Alfredo Cheese Tortellini with Shrimp

Ingredients:
1 lb cheese tortellini (fresh or frozen)
1 lb shrimp, peeled and deveined
2 tbsp olive oil
3 garlic cloves, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tbsp butter
Salt and pepper to taste
Fresh parsley and grated Parmesan for garnish

Directions:
Cook the tortellini: Bring a large pot of salted water to a boil and cook the cheese tortellini according to package instructions. Drain and set aside.
Cook the shrimp: While the tortellini cooks, heat olive oil in a skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side until pink and opaque. Season with salt and pepper. Remove from the skillet and set aside.
Make the Alfredo sauce: In the same skillet, melt butter and add minced garlic. Cook for 1 minute until fragrant. Pour in the heavy cream, bring to a simmer, and stir occasionally for 3-4 minutes.
Add Parmesan: Stir in the grated Parmesan cheese and let it melt into the sauce. Season with salt and pepper to taste.
Combine: Add the cooked tortellini to the Alfredo sauce and toss to coat.
Serve: Top with cooked shrimp and garnish with fresh parsley and extra Parmesan. Serve warm.
