
Ingredients:
1 lb ground beef
8 oz elbow macaroni
1 packet taco seasoning
1/2 cup water
1/2 cup salsa
1 cup shredded cheddar cheese (plus extra for topping)
1/2 cup cream cheese
1/2 cup sour cream
Salt and pepper to taste
Directions:
Cook the macaroni: Bring a large pot of salted water to a boil and cook the elbow macaroni according to package instructions. Drain and set aside.
Brown the beef: In a skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat.
Add seasoning: Stir in the taco seasoning, water, and salsa. Let it simmer for 5 minutes.
Make it creamy: Add cream cheese and stir until melted and combined. Then stir in sour cream and shredded cheddar cheese, cooking until the cheese is melted and the sauce is creamy.
Combine: Add the cooked macaroni to the beef mixture and toss everything together until well coated.
Serve: Serve warm, garnished with extra shredded cheddar cheese if desired.
