Ribeye Steak with French Onions and French Fries

Ingredients:
For the Steak:
1 ribeye steak (1-inch thick)
Salt and pepper, to taste
1 tablespoon olive oil
1 tablespoon butter
1-2 sprigs fresh thyme
1 clove garlic, smashed
For the Onions:
1 large onion, sliced
1 tablespoon butter
Salt and pepper, to taste
1/2 teaspoon sugar (optional for extra sweetness)
For the French Fries:
2-3 potatoes, peeled and cut into fries
Salt, to taste
Oil for frying

Instructions:
Prepare the Fries: Heat oil in a deep fryer or a large pot over medium heat. Once hot, add the potato fries in batches and cook until golden and crispy. Drain on paper towels and season with salt.
Caramelize the Onions: In a skillet, melt butter over medium heat. Add the sliced onions and season with salt and pepper. Cook for 20-25 minutes, stirring occasionally, until onions are golden brown and caramelized. Add a little sugar for extra sweetness, if desired. Set aside.
Cook the Steak: Season the ribeye steak generously with salt and pepper. In the same skillet, heat olive oil over medium-high heat. Add the steak, and cook for about 3-4 minutes per side for medium-rare. During the last minute of cooking, add butter, thyme, and garlic. Baste the steak with the butter mixture.
Serve: Top the steak with caramelized onions, and serve with a side of French fries.
