
Ingredients:
2 pork tenderloins (about 1 lb each)
1 cup apple cider
1/4 cup apple cider vinegar
2 tbsp Dijon mustard
2 tbsp honey
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp fresh rosemary, chopped
Salt and pepper to taste
2-3 small apples, quartered
Directions:
Preheat your oven to 400°F (200°C). Season the pork tenderloins generously with salt and pepper.
In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the pork on all sides until browned, about 4-5 minutes per side.
Remove the pork from the skillet and set aside.
In the same skillet, add apple cider, apple cider vinegar, Dijon mustard, honey, minced garlic, and fresh rosemary. Stir well and bring to a simmer, cooking for about 5 minutes until the sauce starts to reduce.
Add the pork tenderloins and apple quarters to the skillet, spoon some of the glaze over the pork, and transfer the skillet to the oven.
Roast for 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
Let the pork rest for 5 minutes before slicing. Serve with extra glaze and roasted apples.
