
Ingredients:
2 lbs beef stew meat, cubed
2 tbsp olive oil
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
4 cloves garlic, minced
1 bottle (11 oz) Guinness beer
4 cups beef broth
2 tbsp tomato paste
2 tbsp flour
2 tbsp Worcestershire sauce
2 sprigs thyme
2 bay leaves
Salt & pepper to taste
Fresh parsley for garnish
Instructions:
1️⃣ Heat olive oil in a large pot. Brown the beef in batches, then set aside.
2️⃣ Add onion, carrots, and celery to the pot. Cook until softened, then add the garlic and cook for 1 minute.
3️⃣ Stir in the flour and cook for 2 minutes to make a roux.
4️⃣ Pour in the Guinness, stirring to combine. Add the broth, tomato paste, Worcestershire sauce, thyme, and bay leaves. Return the beef to the pot.
5️⃣ Simmer on low for 2 hours or until the beef is tender and the sauce has thickened.
6️⃣ Remove the bay leaves and thyme sprigs. Serve with mashed potatoes and garnish with fresh parsley.
Serve with: A side of creamy mashed potatoes or crusty bread, and a pint of Guinness, of course!
