Creamy Ricotta Beef Stuffed Shells Pasta

Ingredients:
20 jumbo pasta shells
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 cup ricotta cheese
1/2 cup Parmesan cheese, grated
1 large egg
1 tbsp Italian seasoning
1 1/2 cups marinara sauce
1 cup mozzarella cheese, shredded
Salt and pepper to taste
Fresh parsley for garnish

Directions:
Preheat your oven to 375°F (190°C). Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and minced garlic, cooking for 3-4 minutes until softened. Season with salt, pepper, and Italian seasoning. Remove from heat and let it cool slightly.
In a bowl, mix together the ricotta cheese, Parmesan cheese, egg, and a pinch of salt and pepper. Stir in the cooked beef mixture.
Spread 1/2 cup of marinara sauce on the bottom of a baking dish.
Stuff each cooked pasta shell with the ricotta and beef mixture, and place them in the baking dish, open side up. Pour the remaining marinara sauce over the top of the stuffed shells.
Sprinkle the shredded mozzarella cheese over the shells.
Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Garnish with fresh parsley and serve hot.
