Cheeseburger Casserole

Ingredients:
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
2 cups uncooked macaroni or pasta of choice
1 can (14.5 oz) diced tomatoes, drained
1/4 cup ketchup
2 tbsp mustard
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
2 cups cheddar cheese, shredded
1 cup mozzarella cheese, shredded
Salt and pepper to taste
Fresh parsley for garnish (optional)

Directions:
Preheat your oven to 375°F (190°C). Cook the pasta according to package instructions, drain, and set aside.
In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and minced garlic, cooking for 3-4 minutes until softened.
Stir in the diced tomatoes, ketchup, mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Let the mixture simmer for 5-7 minutes to thicken.
Add the cooked pasta to the skillet and stir to combine.
Transfer the mixture to a greased 9×13 baking dish. Top with cheddar and mozzarella cheese.
Bake for 15-20 minutes, or until the cheese is melted and bubbly.
Garnish with fresh parsley and serve hot.
