
Ingredients:
Cake:
1 stick or 8 tbsp butter (softened)
4 large eggs
1/4 cup unsweetened almond milk
3/4 cup granular or powdered sweetener
1 tbsp Simply Organic Pure Madagascar Vanilla Extract
1/4 cup superfine coconut flour
2 cups superfine almond flour
1 tbsp baking powder
1 tsp Simply Organic Cinnamon
Optional: 1/4 tsp salt
Tres Leches (3 Milks):
1 cup low carb condensed milk
1 cup heavy cream
2 cups unsweetened almond milk
My Homemade Whipped Cream:
1 cup heavy cream
4 tbsp powdered sweetener
1 tsp Simply Organic Pure Madagascar Vanilla Extract
Garnish with fresh strawberries!
Instructions:
- Preheat oven to 350F degrees.
- In a mixing bowl, whip your butter until fluffy. Add your sweetener, and beat until combined. It should look like whipped butter at this point!
- Add eggs, almond milk and vanilla extract
- Add in the almond flour, coconut flour, cinnamon and baking powder.
- At this point, your batter should look nice and smooth. Add batter into pan and flatten. Bake for 20-30 minutes, until the cake comes out clean with a knife. The cake should be golden and moist.
- While your cake is baking, make your milk mixture.
- Mix your almond milk, heavy cream and condensed milk
- Using a toothpick or fork, poke holes in top of the cake (making sure you hit the bottom of the cake) and pour milk mixture over the top.
- Let the cake cool down and refrigerate for 2-3 hours.
- When you’re ready to serve, make your whipped cream by beating your heavy cream, powdered sweetener and vanilla.
- Spread the whipped cream on top, add your fruit of choice and serve.
