
Ingredients
8 oz mushrooms, sliced
1 medium onion, thinly sliced
2 tablespoons butter, divided
4 slices sourdough bread
4 oz smoked Gouda cheese, sliced
1 tablespoon olive oil
1 teaspoon thyme (optional)
Salt and pepper to taste
Directions
Sauté the mushrooms and onions: In a skillet, heat olive oil and 1 tablespoon butter over medium heat. Add mushrooms and onions. Cook until softened and browned, about 8-10 minutes. Season with salt, pepper, and thyme.
Assemble the sandwiches: Butter one side of each bread slice. On the unbuttered side, layer Gouda slices, then the mushroom-onion mixture. Top with more Gouda and close with the second bread slice (buttered side out).
Grill the sandwiches: Heat a clean skillet over medium heat. Cook sandwiches for 3-4 minutes per side until golden brown and the cheese melts.
Serve: Cut in half and enjoy warm.
