Garlic Butter Roast Chicken

Ingredients

1 whole chicken (about 3 to 4 pounds)

1/4 cup unsalted butter, melted

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 lemon, halved

Salt and pepper to taste

Fresh thyme for garnish

Directions

Preheat the oven to 220 degrees Celsius (425 degrees Fahrenheit).

Prepare the chicken. Pat the chicken dry and season the inside cavity with salt and pepper. Stuff the lemon halves inside.

Make the garlic butter. In a small bowl, combine melted butter, minced garlic, thyme, rosemary, olive oil, salt, and pepper.

Coat the chicken. Brush the chicken generously with the garlic butter mixture, covering all parts evenly.

Roast. Place the chicken in a roasting pan and roast for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 75 degrees Celsius (165 degrees Fahrenheit). Baste the chicken with pan juices halfway through for extra crispiness.

Garnish and serve. Let the chicken rest for 10 minutes before carving. Garnish with fresh thyme and enjoy.
