Frito Taco Casserole

Ingredients

1 pound ground beef

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

2 cups shredded cheddar cheese

4 cups Fritos corn chips

1/2 cup diced avocado

1/2 cup diced tomatoes

1/4 cup sour cream

Fresh cilantro for garnish

Directions

Cook the beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess grease. Stir in taco seasoning, black beans, and diced tomatoes with green chilies. Simmer for five minutes.

Assemble the casserole: In a baking dish, layer half of the Fritos at the bottom, then top with the taco beef mixture. Sprinkle shredded cheddar cheese evenly over the top.

Bake: Preheat oven to 180°C or 350°F and bake for 10 to 12 minutes until the cheese is melted and bubbly.

Top and serve: Remove from the oven and top with diced avocado, tomatoes, sour cream, and fresh cilantro. Serve immediately for a crunchy and cheesy taco casserole experience.
