1 pound ground beef
1 small onion, diced
1 can (14.5 oz) diced tomatoes
1 cup uncooked white rice
2 cups beef broth
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley for garnish
Directions
Cook the beef: In a large skillet over medium heat, brown the ground beef and diced onion until the beef is no longer pink. Drain any excess fat.
Add the rice and tomatoes: Stir in the uncooked rice, diced tomatoes with their juice, garlic powder, paprika, salt, and pepper.
Simmer: Pour in the beef broth, bring to a simmer, then cover and reduce heat to low. Cook for 18 to 20 minutes, or until the rice is tender and has absorbed the liquid.
Serve: Fluff with a fork and garnish with fresh parsley. Serve warm for a simple yet flavorful dinner.
