
Ingredients
1 pound chicken breast, cut into bite-sized pieces
1 tablespoon olive oil
2 cups broccoli florets
1 medium zucchini, sliced
1 red bell pepper, sliced
1 small carrot, thinly sliced
3 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon oyster sauce (optional)
1/2 teaspoon ground black pepper
Salt to taste
Fresh parsley or green onions, chopped, for garnish
Directions
Heat olive oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until golden brown and fully cooked. Remove from the skillet and set aside.
In the same skillet, add a little more oil if needed. Add broccoli, zucchini, red bell pepper, carrot, and garlic. Sauté for 5 to 7 minutes until the vegetables are tender-crisp.
Return the chicken to the skillet. Add soy sauce, oyster sauce if using, and a dash more black pepper. Stir well to coat everything in the sauce.
Garnish with chopped parsley or green onions and serve hot with rice or noodles.
