
Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/2 cup milk
1 large egg
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 cup mini pepperoni slices (or regular pepperoni, chopped)
1/4 cup pizza sauce
Extra pepperoni slices and shredded mozzarella for topping
Fresh basil or parsley, chopped (optional)
Instructions
Preheat Oven
Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, Italian seasoning, garlic powder, and salt.
Combine Wet Ingredients
In another bowl, whisk together the milk and egg until well blended.
Make the Batter
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the mozzarella, Parmesan, pepperoni, and pizza sauce.
Fill Muffin Tin
Spoon the batter into the muffin tin, filling each cup about three-quarters full. Top each with a bit of mozzarella and a couple of pepperoni slices.
Bake
Bake for 18 to 20 minutes, or until the muffins are golden and a toothpick inserted in the center comes out clean.
Cool and Serve
Let the muffins cool slightly in the pan before transferring to a wire rack. Garnish with fresh basil or parsley if desired.
