Carrot Bars with Maple Frosting

Ingredients

For the Carrot Bars:

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup unsalted butter, melted

1 cup light brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup grated carrots

For the Maple Frosting:

1/4 cup unsalted butter, softened

2 ounces cream cheese, softened

1 1/2 cups powdered sugar

1/4 cup pure maple syrup

1/2 teaspoon vanilla extract

Instructions

Prepare the Carrot Bars
Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, combine melted butter and brown sugar until smooth. Add eggs and vanilla extract, whisking well.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the grated carrots.
Pour batter into the prepared pan and spread evenly.
Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.

Make the Maple Frosting
Beat the softened butter and cream cheese until smooth.
Add powdered sugar, maple syrup, and vanilla extract, beating until light and fluffy.

Assemble the Bars
Once cooled, spread the frosting evenly over the carrot bars.
Cut into squares and serve.

Cook Time: 25-30 minutes
Serves: 9 to 12
