1 cup orzo pasta
1 tablespoon olive oil
2 cups fresh spinach
1 cup cherry tomatoes, halved
3 cloves garlic, minced
Salt and pepper to taste
Grated Parmesan (optional, for garnish)
Directions
Cook the orzo: Boil orzo according to package instructions. Drain and set aside.
Sauté garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
Add tomatoes and spinach: Toss in the cherry tomatoes and cook for 2 to 3 minutes until softened. Add spinach and cook until wilted.
Combine: Add the cooked orzo to the skillet and stir to combine. Season with salt and pepper to taste.
Serve: Garnish with grated Parmesan if desired.
