Broccoli Cheddar Soup

You will need:

  • 4 cups broccoli florets
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup chicken or vegetable broth
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Directions:

  1. Cook Broccoli: Steam broccoli until tender, about 5 minutes. Set aside.
  2. Make Roux: In a pot, melt butter over medium heat. Stir in flour to make a roux, then slowly whisk in milk and broth. Cook until thickened.
  3. Add Cheese and Broccoli: Stir in cheese until melted, then add steamed broccoli. Season with salt and pepper.
  4. Blend (Optional): For a smoother texture, blend the soup with an immersion blender.
