Roasted Sausage, Zucchini & Baby Potatoes Skillet

Ingredients:
2 smoked sausages, sliced
1 zucchini, sliced
1 yellow squash, sliced
1/2 red bell pepper, sliced
1 lb baby potatoes, halved
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
1/2 tsp black pepper
1/2 tsp salt
1/4 tsp red pepper flakes (optional)

Step by Step:
1️⃣ Roast the Potatoes:
Preheat oven to 425°F (220°C).
Toss baby potatoes with 1 tbsp olive oil, garlic powder, paprika, salt, and black pepper.
Spread on a baking sheet and roast for 20 minutes.

2️⃣ Prepare the Sausage & Veggies:
While potatoes are roasting, slice the sausage, zucchini, squash, and bell pepper.
Toss with 1 tbsp olive oil and a pinch of salt and pepper.

3️⃣ Combine & Roast Everything:
After 20 minutes, add the sausage and veggies to the baking sheet with potatoes.
Roast for another 15-20 minutes until golden and caramelized.

4️⃣ Final Touch & Serve:
Remove from the oven, toss everything together, and serve warm.
