- 2 boneless, skinless chicken breasts, cubed
- 1 tbsp Cajun seasoning (adjust to taste)
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 8 oz fettuccine pasta
- Fresh parsley, chopped (for garnish)
Directions:
- Cook the fettuccine according to package directions until al dente. Drain and set aside.
- Season the cubed chicken with Cajun seasoning, salt, and pepper.
- In a large skillet, heat olive oil over medium heat. Add the chicken and cook until golden brown and cooked through, about 5-6 minutes. Remove the chicken and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in the chicken broth and heavy cream, stirring well to combine.
- Add the Parmesan cheese, stirring until the sauce is smooth and creamy. Simmer for a few minutes until it thickens slightly.
- Return the cooked chicken to the skillet, and add the cooked pasta, tossing everything together until well coated.
- Garnish with fresh parsley and serve warm.
