
Ingredients:
1 lb carrots, peeled and cut into sticks
1 lb baby potatoes, halved
1 large zucchini, cut into thick slices
4 tablespoons olive oil
1 tablespoon Italian seasoning
1 teaspoon garlic powder
Salt and pepper, to taste
1 tablespoon chopped fresh parsley (optional)
Directions:
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the carrots, baby potatoes, and zucchini.
Drizzle the olive oil over the vegetables and sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss well to coat all the vegetables evenly.
Spread the vegetables in a single layer on a baking sheet.
Roast in the preheated oven for 30-35 minutes, or until the vegetables are tender and golden, stirring halfway through.
Once done, remove from the oven and sprinkle with fresh parsley if desired.
Serve hot and enjoy your delicious roasted veggies!
