Apple Cinnamon Pancakes

Ingredients:
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 large egg
1 cup buttermilk
1 tablespoon unsalted butter, melted
1 apple, peeled, cored, and finely chopped
1/2 teaspoon vanilla extract

Directions:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
In another bowl, beat the egg, then add the buttermilk, melted butter, and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be a bit lumpy.
Fold in the chopped apple gently.
Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or cooking spray.
Pour about 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface of the pancake, about 2-3 minutes. Flip and cook the other side until golden brown, about 1-2 minutes more.
Repeat with the remaining batter, greasing the skillet as needed.
